Grape: 80% Chasselas, 20% Muscat from Domaine Sylvie Faller, St-Hippolyte.
Farming: Organic
Method: Natural
Alc: 11%
How it tastes: A refreshing fizz with flavours of lemon curd, grapefruit, apricot, and a hint of musk - ideal while anticipating the comeback of the warmer days.
How it's made: Chasselas (80%) undergoes direct pressing, with the addition of macerated Muscat (6 days of skin contact with whole bunches), and is vinified in stainless steel vats. Natural fermentation in the bottle with disgorgement taking place after 6 months of aging. No additives, unfiltered, and contains low added sulphites.

from Albert Hertz's vineyard, Eguisheim.

Method: Natural
Alc: 12.5%
How it tastes: Aromatic with a combination of fruit, citrus, and wildflower notes with subtle hints of herbs and a distinctive mineral finish.
How it's made: Whole clusters, direct press, a cuvée resulting from the co-fermentation of grape varieties, 12 months of aged in old oak barrels, no additives, unfiltered, only a little addition of sulphur at bottling.

How it tastes: Aromatic bouquet featuring baked apple notes with hints of yellow fruits and white flowers, complemented by mineral undertones. Perfectly balanced with a remarkable energy.
How it's made: Initial natural fermentation occurs in stainless steel tanks, during the second traditional bottle fermentation (following the champagne process), the wine is left to age on the fine lees for a minimum of 10 months before undergoing disgorgement, low sulphites added.

How it's made: Hand-harvested grapes undergo a 5-day cold maceration. After gentle pressing, the wine ages in used barrels for 11 months without additives or filtration.
