How it tastes: Petits Sylphes presents roundness on the palate with white peach and pear flavours and subtle notes of smoky white pepper and elderflower. Long finish and impressive acidity.
How it's made: Spontaneous co-fermentation in stainless steel, with Chenin Blanc fermented separately. Aged for 5 months in concrete tanks, without additives. Minimal sulphites added at bottling, unfiltered.
